March Meals


Baked "fried" Chicken (Melinda)
Chicken Legs ( I did 2 per person)
Shake and Bake in a box (depends on which brand you get how many legs you can coat so READ it and decide how many boxes)
Milk

I just followed the recipe on the back of the box of the Shake and Bake

Afton's Meat Loaf
2 eggs
3/4 c milk
2/3 c crushed saltines
1/2 c chopped onions
1 tsp salt
1/2 tsp sage
dash of pepper
1 1/2 lbs ground beef

Sauce:
1 c ketchup
1/2 c brown sugar
1 tsp worcestershire sauce

***Combine eggs, milk, saltines, onion, salt, sage and pepper in bowl.
Add beef. Shape into loaf. Spread with sauce. Bake 350 for 50-65 min

Pork Chops (Melinda)
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon lemon juice
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 6 pork chops, trimmed
  1. Preheat oven to 350 degrees
  2. In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.
  3. Place pork chops in a medium baking dish, and spread with 1/2 the sauce.
  4. Bake pork chops 30 minutes in the preheated oven. Turn, and spread with remaining sauce. Continue baking 30 minutes, or until internal temperature of the chops has reached 160 degrees. (allrecipes.com)

Cheesy Italian Tortellini (Afton)
1/2 lb ground beef
1/2 lb italian sausage
1 (16 oz) jar marinara sauce
1 (4.5 oz) can sliced mushrooms
1 (4.5 oz) can italian-style diced tomatoes
1 (9oz) cheese tortellini
1 c shredded mozzarella cheese
1/2 c shredded cheddar cheese

Brown beef and sausage. Then add marinara sauce, mushrooms
and tomatoes in slow cooker. Cook on low for 7-8 hours. Stir in
tortellini and sprinkle cheese. Cover and cook for 15 min on low.
OR: Bake at 350 for 45-60 minutes

Italian Meatball Soup (Melinda)
Prep Time 15min Category-Soup Servings:6

Ingredients
1 141/2oz. can diced tomatoes with onions and garlic
2 cups beef broth
1 1/4c. water
1/2 tsp Italian seasoning
8oz of frozen cooked meatballs
1/2 c. small dried pasta (like elbow)
1 c. Frozen mixed vegetables
Parmesan Cheese

Instructions
In a large sauce pan, stir together undrained tomatoes, beef broth, water and seasoning. Bring to a boil. Add Frozen vegetables, meatballs, uncooked pasta. Return to boiling: reduce heat, Cover and simmer about 10 min or until pasta and vegetables are done. Top with Parmesan cheese

Sausage Cabbage Soup (Jessica)
SERVES 4 -6

Cook sausage in a 300°F oven for approximately 30 minutes.Drain sausages on paper towels and cut into slices.Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.Add sausage and bacon.Salt and pepper to taste.Simmer for another 10 minutes.Turn to low heat.Add kale and cream.Heat through and serve.

Cafe Rio Pork (Melinda) serves 6
3-5 lbs pork roast or ribs
1 bottle taco sauce (8 oz)
1 T cumin
1 C brown sugar
1 can Coke (not diet)

Cook pork in pot on low for 6 hours (cover roast ½ with water. I cooked for a couple of hours on high and switched to low, that made it shred easier; also, when you add the other ingredients, please take out some of the water, leaving only about ½ in. in the bottom of the pot). Add ingredients to pork 3 hours before it is done.
